Lunch in Essaouira: Quick Sardine Tagine
Freshly caught sardines, juicy tomatoes, fresh herbs, and warm spices—a simple, quick dish bursting with marine flavors.
Ingredients (for 2)
- 400 g of cleaned sardines
- 3 ripe tomatoes
- 1 onion
- 1 clove of garlic
- 1 tsp of cumin
- 1 tsp of paprika
- Fresh coriander, salt, pepper, olive oil
Preparation
1. Sauté the onion and garlic in olive oil until translucent.
2. Add the crushed tomatoes and spices, and let simmer for 5 minutes.
3. Place the sardines in the sauce, cover, and cook for 6–8 minutes on low heat.
4. Sprinkle with fresh coriander and serve with bread or couscous.
