Essaouira Fish Tagine — Quick Recipe 🌊🐟

Ingredients (serves 4):

- 500 g of white fish fillets or sardines

- 3 ripe tomatoes

- 1 onion

- 2 cloves of garlic

- 1 bell pepper

- 1 bunch of cilantro

- 1 lemon

- 2 tablespoons of olive oil

- 1 teaspoon of paprika

- 1/2 teaspoon of cumin

- Salt, pepper, chili to taste

Preparation:

1. Chop the onion, garlic, and cilantro, and slice the tomatoes and bell pepper.

2. In a tagine dish or large pan, heat the oil and sauté the onion until translucent.

3. Add the garlic, paprika, and cumin, then the tomatoes and bell pepper. Let it simmer for 10 minutes.

4. Place the fish fillets on the bed of vegetables, season with salt and pepper, and drizzle with lemon juice.

5. Cover and cook on low heat for 12 to 15 minutes until the fish is tender.

6. Sprinkle with fresh cilantro and serve with Moroccan bread or couscous.

Tip: For more flavor, marinate the fish for 30 minutes in a mix of oil, lemon, garlic, and spices before cooking.
