My name is Khadija, and if today I welcome you into my kitchen, it is above all to share a story—one deeply rooted in the Berber traditions of Essaouira.
My story was shaped between two worlds that have made me the woman I am today.
During school holidays, I would return to the Berber countryside, where time seemed to flow at a different pace. Life followed the rhythm of the sun, the changing seasons, and the work of the land. It was there that I developed a deep love for nature and a profound respect for the ancestral knowledge passed down through generations.
With endless patience, my grandmother taught me the traditional art of making argan oil. By her side, I learned that every drop of this precious oil carries hours of work, dedication, respect, and heritage. My father, meanwhile, introduced me to beekeeping. Watching the bees with him taught me to respect nature, to appreciate the importance of every living creature, and to admire the delicate balance that sustains our world.
When the school year began again, we returned to our home in a narrow alley of Essaouira's medina, just a few steps from the old market. I loved wandering through its lively streets, where the vibrant colours of fresh vegetables blended with the aromas of spices, fragrant herbs, and fish freshly brought in from the harbour. Without even realizing it, I was already developing a love for authentic ingredients and the unique flavours of my homeland.
Yet the true heart of my childhood was my mother's kitchen.
My mother was an extraordinary cook. She cooked with instinct, experience, and above all, with love. Tagines simmered slowly, bread was baked every day, pastries filled the house with irresistible aromas, and every meal became a celebration. I grew up surrounded by those scents that, even today, instantly transport me back to my childhood. She taught me far more than recipes—she taught me that cooking is a way of loving, welcoming, and bringing people together.
Life, however, first led me down a very different path. For many years, I pursued a career that allowed me to develop discipline, leadership, organizational skills, empathy, and a deep sense of responsibility. It was a journey that profoundly shaped the person I have become.
Then came a moment no one ever chooses: one of life's unexpected trials. It invited me to slow down, reconsider my priorities, and ask myself what truly gave meaning to my life.
The answer came naturally.
To return to my roots.
I realized that my greatest treasure was not only what I had achieved throughout my professional career, but also everything my family had passed on to me: my grandmother's skilled hands, my father's love of nature, my mother's remarkable talent, the scents of my childhood, and the Berber culture that forms such an essential part of who I am.
Creating this cooking class was therefore far more than a career change.
It was a journey back to myself.
A way of transforming life's challenges into a new beginning, preserving my family's heritage, and offering travellers far more than a cooking class—a genuine immersion into the Moroccan way of life.
Today, when I welcome you, my wish is not simply to teach you how to prepare a tagine or traditional Berber bread.
I want to open the doors to my world.
Together, we will discover Berber traditions, local ingredients, the story behind argan oil, the secrets of Moroccan spices, and the timeless gestures that have been passed down from one generation to the next.
For one day, you will not simply be taking part in a cooking class.
You will be welcomed as guests in my family's home.
We will cook together, share a meal, exchange stories, laughter, and unforgettable memories.
Because Moroccan cuisine is not passed down through recipes alone.
It is passed from heart to heart.
And it is this story (my story) that I am truly honoured and delighted to share with you here in Essaouira.
