At Essaouira Cooking, we don’t simply want to teach you how to prepare a tagine, couscous or pastilla. Khadija shares the essential skills, techniques, use of spices and principles that make Moroccan cuisine so rich and distinctive. Our aim is for you to leave with genuine know-how, adapt the recipes to your everyday cooking and, above all, rediscover at home the pleasure of cooking and sharing food with others.
Choose Local and Seasonal Produce
We believe that delicious cooking begins with fresh, local and seasonal ingredients. Whenever possible, we choose vegetables, herbs, spices, meat and fish sourced from Essaouira and the surrounding region. The markets, small local shops and the port of Essaouira are all part of this vibrant ecosystem, where cooking naturally follows the seasons and the day’s fresh arrivals.
Reduce Plastic Use
We aim to limit the use of single-use plastics as much as possible. Shopping directly at the market, choosing fresh produce and working with local suppliers also helps us reduce unnecessary packaging. This simple approach is part of our commitment to offering a culinary experience that is more respectful of our environment.

Moroccan cuisine can be generous and refined without being complicated. We teach recipes and techniques that you can genuinely recreate at home, using accessible ingredients and simple methods. Our workshops are designed to give everyone confidence in the kitchen, whatever their level of experience, and to make every recipe a source of inspiration for future meals.

Respecting an ingredient also means learning how to make the most of it. During our workshops, we pay particular attention to quantities, ingredient preparation and making good use of everything that can be used. Our goal is simple: to cook generously while reducing food waste as much as possible.
