A gourmet break in the heart of the Had Dra souk

Sunday is a special day in the Essaouira region. From the early hours of the morning, the Had Dra souk comes alive with the rhythm of merchants, farmers, and residents from surrounding villages who come to sell, buy, trade, and share a moment of conviviality.

When I accompany my guests to the souk, we take our time to stroll through the aisles. The stalls overflow with freshly harvested vegetables and fruits, olives, spices in a thousand colors, honey, argan oil, traditional breads, and numerous local products. Further on, enclosures house poultry, sheep, and goats, testifying to the importance of agriculture and livestock in Moroccan rural life. Every aisle tells a story, every encounter is an invitation to discover ancestral skills.

After this vibrant immersion, a delicious aroma of embers naturally guided us to the souk’s dining area. Under a large tent, several grills cooked slowly over charcoal barbecues. The atmosphere was simple, warm, and authentic. Families, merchants, and visitors shared their meals in a joyful ambiance, away from the hustle and bustle of big cities.

We chose to savor lamb chops and freshly prepared minced meat. To our great surprise, the seasoning was remarkably simple: only salt, pepper, and a pinch of cumin. Nothing more.

And yet... what a wonder! The meat was incredibly tender, juicy, and flavorful. Cooking over the embers revealed the quality of the product, while the cumin added that distinctive touch of Moroccan cuisine, without ever overshadowing the taste of the meat.

My guests were captivated from the first bite. They did not expect to have such an authentic experience in the heart of a rural market. For them, this impromptu meal quickly became one of the most memorable moments of their stay. They discovered that the best culinary experiences are not always found in restaurants but sometimes simply around a barbecue, amidst locals, in a place where traditions are still profoundly alive.

This is precisely what I love to share through my culinary experiences: going beyond recipes and revealing Morocco as it is lived daily. The Had Dra souk is not just a market; it’s a place of encounters, transmission, and generosity. Sitting under a tent to savor grilled dishes made with market products is to taste the authenticity of a region and live a moment that one does not forget.

Sometimes, the most precious memories arise from the simplest things: a few embers, meat of exceptional quality, a pinch of cumin… and the pleasure of sharing a meal at the heart of Moroccan life.
