The treasures of Essaouiras organic farms: authentic flavors in tune with the seasons

Moroccan cuisine draws its richness from the quality of its ingredients, and the Essaouira region is no exception. Located between the Atlantic Ocean and the hills of the Chiadma countryside, numerous farms cultivate their land with respect for the seasons and traditional expertise.

Throughout the year, gardens offer a wide variety of sun-kissed fruits and vegetables: fragrant tomatoes, zucchini, carrots, fava beans, peas, pumpkins, turnips, aromatic herbs, pomegranates, figs, grapes, oranges, and melons. Harvested at their peak, these products retain their freshness and flavor, making each season a new source of culinary inspiration.

The region is also home to two exceptional products: argan oil and Chiadma olive oil. Culinary argan oil, obtained from delicately roasted kernels, captivates with its nutty flavors and accompanies salads, tagines, couscous, and the traditional amlou. As for the Chiadma olive oil, pressed from olives grown on the surrounding hills, it is appreciated for its balance, delicate fruitiness, and remarkable quality.

Another specialty of the Essaouira countryside is farm-made goat cheese, crafted artisanally from the milk of free-range herds. Its creamy texture and delicate taste make it a highly appreciated product, enjoyed simply with homemade bread or paired with olive oil, honey, or fresh herbs.

During our cooking class in the Berber countryside of Essaouira, we prioritize these local products for our recipes. Cooking with freshly picked vegetables, local olive oil, artisanal argan oil, or farm-made goat cheese not only allows us to discover the true flavors of the region but also supports the farmers and producers who continue these traditions.

Tasting the products from Essaouiras farms is discovering sincere, generous cuisine that is deeply connected to its terroir. It is a cuisine where each ingredient tells the story of the land, climate, and the passionate men and women who cultivate it.
