On Sundays when our cooking class is scheduled, w Souk: At the Heart of Local Lifee occasionally have the pleasure of starting the day with a visit to the weekly souk of Had Draâ, located about thirty minutes from Essaouira.
Far from the tourist markets, this souk is a vibrant place where residents of the surrounding villages have gathered for generations. From the early hours of the morning, stalls are filled with freshly harvested vegetables, seasonal fruits, aromatic herbs, olives, spices, grains, honey, argan oil, and a variety of local products.
As you wander through the aisles, youll experience the bustling atmosphere of an authentic market. Farmers offer the harvests from their own lands, vendors exchange a few words with their regular customers, artisans showcase their creations, and the scents of fresh mint, coriander, cumin, and saffron blend with the joyful hustle and bustle of the market.
It is here that I come to select some of the ingredients we will cook with together. I explain how to recognize quality vegetables, which spices to use according to the recipes, how to choose good argan oil, and which products are typical of the Essaouira region. Its also an opportunity to discover seasonal fruits and vegetables and to understand the important role they play in Moroccan cuisine.
This visit is much more than just a trip to the market. It allows you to observe the daily life of the local people, learn about local trading traditions, and experience a moment that few travelers take the time to explore.
After the souk, we head to our home in the Berber countryside to prepare a meal with the products we have just selected. Each dish then takes on a special dimension, as you now know the origin of its ingredients and the people who cultivated them.
For many of our visitors, this immersion at the Had Draâ souk is one of the highlights of their stay. It offers a more intimate and authentic view of Morocco, where cooking begins long before the stoves; it is born in the fields, at the market, and through encounters and exchanges.
