Ingredients (serves 4):
- 1 whole chicken cut into pieces (or 1 kg of thighs)
- 2 onions, sliced
- 3 cloves of garlic, crushed
- 1 teaspoon ground ginger
- 1 teaspoon turmeric
- 1 teaspoon Ras El Hanout
- 1/2 bunch of coriander and parsley, chopped
- 2 preserved lemons, cut into quarters
- 150 g pitted green olives
- 3 tablespoons olive oil
- Salt and pepper
Preparation:
1. Sauté the onions and garlic in oil until translucent.
2. Add the chicken, spices, salt, and pepper, then lightly brown.
3. Incorporate the coriander and parsley, cover halfway with water, and let simmer for 30–40 minutes.
4. Add the preserved lemons and olives 10 minutes before the end of cooking.
5. Adjust the seasoning and let the sauce reduce if necessary.
Essaouira tips: Choose homemade preserved lemons for more character; let the dish rest for an hour before serving to intensify the flavors.
